📋 Ingredients:

  • 1/2 cup quinoa
  • 1 cup water
  • 1/4 cup chopped carrots 🥕
  • 1/4 cup chopped bell peppers
  • 1/4 cup boiled peas
  • 1/4 cup chopped cucumber
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice
  • 1/2 tablespoon olive oil

👨‍🍳 Steps to Make:

  1. Rinse quinoa in water 2–3 times.
  2. Boil 1 cup water, add quinoa and a pinch of salt. Cook for 12–15 mins until soft.
  3. In a bowl, add cooked quinoa, all chopped veggies, lemon juice, and olive oil.
