Chicken Biryani – Spicy & Flavorful Desi Rice

When we talk about desi food, chicken biryani is always at the top! It’s not just food — it’s a feeling! This dish is full of taste, color, and smell. Every bite is a mix of soft chicken, spicy rice, and desi love. ❤️🍗
You can make this biryani easily at home without any fancy tools. It’s perfect for family dinners, dawat, or Sunday lunch. Let’s make delicious biryani that everyone will remember.
📋 Ingredients:
For Rice:
- 2 cups basmati rice (soaked 30 mins)
- 1 bay leaf, 2 cloves, 1 cinnamon stick
- Salt to taste
- Water to boil rice
For Chicken:
- 500g chicken
- 2 onions (sliced)
- 2 tomatoes (chopped)
- 1/2 cup yogurt
- 2 tablespoons oil
- 1 tablespoon ginger garlic paste
- 1/2 teaspoon turmeric
- 1 teaspoon red chili powder
- 1 teaspoon biryani masala
- Salt to taste
- Chopped coriander & mint leaves 🌿
- 1–2 green chilies (optional)
- Few drops of kewra water (optional)
- Orange/yellow food color (optional)
👨🍳 Steps to Make:
- Cook Rice: Boil water with salt and whole spices. Add soaked rice. Cook 70% and drain. Keep aside.
- Fry Onions: In another pot, heat oil and fry onions until golden brown. Remove some for garnish.
- Cook Chicken: In same pot, add ginger garlic paste, then chicken. Fry until it changes color.
- Add tomatoes, yogurt, spices, and cook until oil separates and chicken is tender.
- Add green chilies, coriander, and mint. Mix well.
- Layering:
- Spread half of the cooked rice over chicken.
- Sprinkle fried onions, food color, kewra water (if using).
- Add remaining rice and garnish again.
- Cover the lid tightly. Cook on low flame (dum) for 15–20 minutes.
- Serve hot with raita or salad! 🥗

✅ Don’t overcook chicken.
✅ Add boiled potatoes if you like.
