Nankhatai – Desi Cardamom Cookies

📋 Ingredients:
- 1 cup all-purpose flour (maida)
- 1/4 cup besan (gram flour)
- 1/4 cup sooji (semolina)
- 1/2 cup powdered sugar
- 1/2 cup ghee (or butter) 🧈
- 1/2 teaspoon cardamom powder (elaichi)
- 1/4 teaspoon baking powder
- A few chopped pistachios or almonds (optional)
👨🍳 Steps to Make:
- In a large bowl, add ghee and sugar. Mix well until it becomes creamy.
- Now add flour, besan, sooji, cardamom powder, and baking powder. Mix everything together.
- Make a soft dough using hands. If dry, add 1–2 spoons of milk.
- Divide into small balls and flatten slightly. Add pistachio on top if using.
- Place on baking tray. Bake at 160°C for 15–18 minutes until light golden.
- Let them cool completely. They will become crispy after cooling.
- Store in an airtight box and enjoy anytime! 🫙
